Five good things that happened this week.
1. Through the week, the Young One sent pictures of the new apartment as they moved in.
2. Lunch at D'Angelo's (subs) with Teague, and then a Napolitan (Napoleon) from the bakery for dessert
3. I watched The Electric Horseman
4. Himself fried eggplant. I put it together to make an eggplant Parmigiana. What a team!
5. Since the Eldest had to work Thanksgiving, Himself and I had Italian Thanksgiving. We had the eggplant, and I made lasagna. I also baked an Italian bread. We'll have the traditional holiday on Saturday when the Eldest has the day off.

*Hubs and i started a marathon of Indiana Jones last night... fun.. haven't seen them in forever..

*The cover over hubby's porch on his shop is slowly going up
*Golf today.. might be too cold but the rest of the week looks abysmal ...
I never liked eggplant.. My grandparents grew it in their garden in Florida and grandma would make it once in a while.. I spent entire Summers with them... she was always nice enough to have something else for me to eat.. I don't think i've tried it as an adult.. i should.. Hugs! deb
I’ve been watching Robert 😻Redford movies. Eggplant Parmigiana is like pizza only with an eggplant base and layers. Yum!

DeleteI don't think I've ever heard of that movie. I'm the only one here who likes eggplant parmesan, and I find eggplant a trial to deal with. I'd gladly eat some of yours, though :)
ReplyDeleteI don't like the preparation as it is time consuming. So in the spirit of sharing because Himself likes the dish, I trained him to be my sou chef and to slice, press the water out, and fry the eggplant. He will fry it up while he watches baseball, football, basketball, etc. Then I come along make the gravy (sauce though sometimes from a jar), put the eggplant together with the mozzarella and bake it. Just like the Chef. 😺
