Iris asked me for the Zucchini Bread Waffle recipe I mentioned in last week's Friday Five. Bust out your waffle iron. The recipe is from Ree Drummond, The Pioneer Woman and the waffles are oh, so good!
I didn't make the maple - cream cheese syrup. Himself used real maple syrup, and I like my waffles with a dusting of powdered sugar. My waffle iron must be a lot smaller than Ree's because this recipe made a ton of waffles. Leftovers were refrigerated and fit nicely in the toaster to crisp them up.
I didn't take pictures of my waffles, but the waffles looked a lot like this photograph:

I really should make waffles! But pancakes are so much easier.
ReplyDeletebest... mae at maefood.blogspot.com
But occasionally, the waffles are worth the effort
DeleteI love waffles but only make them when I have visitors, too much temptation when I'm on my own! Happy T Day, Valerie
ReplyDeleteWaffles are so good.
DeleteThat's an amazing idea. Some people are so clever. And definitely a good source of fiber rather than plain old waffles. Thanks for sharing these. And have a great T day. It certainly is beautiful weather!
ReplyDeleteA different way to use up zucchini
DeleteThey look sooo yummy!!!
ReplyDeleteThey were.
DeleteI like any kind of waffles :) and my husband enjoys making them. I put fruit or preserves/jam on mine as a rule. That cup is lovely! Happy T Tuesday
ReplyDeleteI enjoy waffles, but they do take a lot longer to make than pancakes. I'd love someone to make me waffles. ๐บ
DeleteA wonderful way to use zucchini! We make extra waffles and pancakes and freeze them. They warm up great in either the microwave or toaster! :)
ReplyDeleteI just put the extras in the fridge because I knew I would go through them in a couple of days. They were that good.
DeleteThey do look good, and I've been tempted to get a waffle maker, but I'm with Mae and prefer doing pancakes:) Happy T day!
ReplyDeleteIt's too bad a waffle iron is such a uni-task appliance.
DeleteSo yummy and tasty ๐
ReplyDeleteSuch yummy waffles and I'm a big fan of Ree Drummond, The Pioneer Woman and have a few of her cookbooks! I love how you made them with zucchini, I'll have to try them out ๐. Happy T Day wishes! Hugs, Jo x
ReplyDeleteThe zucchini is an ingredient in Ree’s recipe
DeleteI have my grandmother's waffle iron, but I prefer to make pancakes. I've only used it a few times for company. That's a lovely teacup and the waffle recipe sounds wonderful. Thanks for sharing it and your tea with us for T this Tuesday, dear CJ.
ReplyDeleteThe teacup isn’t mine. The photo came from Pexels.
DeleteDelicious sounding waffles. I bet they were tasty. I have never tried her recipes. I will have to browse her website.
ReplyDeleteHappy Tea Day,
Kate
They were a big hit. I've watched her show, but this was the first time I tried her recipes.
DeleteI'm glad that Iris asked for that recipe. A nice variation to the sweet waffles. I might get out my old waffle iron. Thank you and happy T day!
ReplyDeleteI didn't think the waffles were overly sweet, but you could probably cut the amount of sugar.
DeleteI love waffles and love Zucchini Bread so I definitely will be trying this. Yummmmm. Thanks for sharing, CJ! Happy T-day.
ReplyDeleteThe best of both worlds!
Deletewhen I make waffles, I have to halve the recipe. In fact for just the two of us I have to halve all recipes, and then we still eat it for three days! LOL Your waffles sound and look delicious, even though they just look like the photo you showed us. I can never remember to take photos. Happy T Day!
ReplyDeleteI didn't have a Tues. post planned. Then Iris asked for the recipe so I had to wing it!
DeleteI'm sorry I'm late again in commenting. Tuesday is a day we usually are away from home and as Blogger doesn't like iPhones or iPads, I cannot do anything until I get back home to my desktop. Sometimes this is quite late, so here I am on Wednesday...
ReplyDeleteI often make waffles (usually savoury ones actually) but these look really yummy. My computer doesn't want to open the Ree Drummond page (I used to follow her about 15 years ago but have lost track) but I will find the recipe somehow and make them soon. We always have too many zucchinis.
Happy belated T-Day,
Hugs,
Lisca
No worries. I'm happy you came to visit.
DeleteOh what a great recipe. Thank you for sharing it.
ReplyDeleteUnfortunately I couldn't view the recipe, not sure why!?
ReplyDeleteSo pleased you enjoyed them though.
All the best Jan
