T Stands for Carrot Cake Breakfast Shake

 

Once again, I'm trying to drop a few pounds. Baking during Massachusetts' Stay at Home Advisory during the early months of the Covid-19 pandemic was too tasty. 

This recipe for a Carrot Cake Breakfast Shake comes from a 12 Week Metabolic Meal Plan.

Ingredients for One Serving:

1 serving protein powder or vanilla powdered shake mix
1 carrot, chopped (I used a handful of baby carrots)

1/4 skin on apple (I can't stand recipes that use only a small portion of a fruit or veg. What do you do with the other 3/4 because apples aren't low carb? So I used 1/4 cup unsweetened applesauce)

1/2 cup of unsweetened, non-dairy milk. (I used unsweetened coconut milk)
4 ice cubes
1 T. chia seeds
1 T. orange zest (I used Orange Peel from the spice cabinet)
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Optional: 1 T. chopped walnuts
                1 T. unsweetened coconut flakes

Put all ingredients in a blender and blend. Use a little water to adjust the thickness if necessary.

Enjoy!

  1. Good morning-sounds good I agree with you that would be a waste of the apple, I don't like recipes that only use the whites or the yolks either. carrots have sugar and carbs so surprised that was included (I only know that because Hubs is diabetic) Happy T Kathy

    1. It’s a small amount of sugar/carbs and if you cut out the carbs for the rest of the day, no problem

  5. That does sound very good. At first I was like, what? But no, I would drink that. I have hit the fall baking time. Spices and apples and nuts...Trying to keep walking as my thyroid went off and I gained a couple of pounds myself. Thanks for sharing the recipe. Happy T day and happy autumn. Hope you can be happy and don't have tears in your eyes that summer is over. At least it is NOT winter yet.

  7. hmmm... I'll skip the shake ;) I've always found skipping a meal entirely preferable to drinking it. I'm not sure why that is... Happy T Tuesday

  15. The applesauce was a clever substitution. You didn't mention if it was tasty. Shakes (except chocolate malted milk - lol) don't appeal to me.

    1. The comment didn’t appear because I was out with Himself running errands and then cleaning out a shed so wasn’t approving comments quickly. As to delete it? No, extra comments make the stats look better. 😺 Yes, it tastes very good like carrot cake. The applesauce helps with making the shake thicker. I like a thick shake. You can use extra water or non-dairy milk to adjust the thickness.

  17. Oh, my goodness! You had me at carrot cake! LOL I had a frozen banana, blueberry yogurt smoothie for breakfast today after my 3 mile walk. It was exactly what I wanted. But oh, yum on yours! Happy belated Tea Day!
