T Stands for Blueberry Pie Cookies


My friend, the Grandmaster E, had posted a recipe for Blueberry Pie Cookies. The recipe sounded so good and easy I just had to bake them.

They were really easy. Just use canned pie filling, store bought pie crust, cut, and bake. I didn't bother weaving the crust to form the lattice pattern. I just laid the pie crust strips over. My crew wouldn't notice or care. I didn't have any sanding sugar so just used regular sugar. I also had to bake the cookies a lot longer than the recipe stated even though my cookie cutter was smaller. So if you decide to make them, keep an eye on your little pies. I also baked the cut scraps. Waste not. Want not.

They were delicious with a cup of tea.

    1. The premade crusts made the cookies appealing to bake. If I had to make pie crust, I probably wouldn't have made the cookies

  3. They sounds good and easy. They would be perfect when you want fast pie and not a whole slice. or me, since the hubby won't eat blueberry pie but it is my favorite. Or one of them. Let's face it, anything pie like is great. Happy T day CJ.

    1. You can use any pie filling. Make two batches blueberry for you and a batch with Hubbie's favorite pie filling. 😊

  6. I was cleaning a shelf in my cupboard the other day looking for relish, when I found a can of pie cherries. I may try the recipe using cherries instead of blueberries. I think I can make my own piecrust. Thanks for sharing the recipe, CJ. I am grateful and will copy it. I bet yours went well with your tea, too. Oh wow what a very fun idea for a little treat! when I would make pie crusts the left over dough was rolled out with butter and cinnamon sugar sometimes I would add some jam or raisins roll it up and slice and bake-we called them roll em ups haha My Grandma and Mom always made them Happy T hugs

    1. I didn't do a traditional lattice. Too lazy. I just laid the first set of strips and then the second set on top, no weaving 😊

  20. Pretty, easy and tasty...I am going to try these. I have a lot of rhubarb coming up and I like to make just a few of treats at a time, so this will work great and I can tell them CJ told me how to make them!
