T Stands for Starlight Double Delight Cake



During Birthday Month (July), I had mentioned the Young One requested a chocolate cake with chocolate frosting and flavored with orange. I decided I would bake one of the recipes from Ma's recipe box. Starlight Double Delight Cake.

Ma had a recipe she clipped from a magazine back in the 1950s or 1960s. The original recipe called for the flavoring to be peppermint extract. I'm not a huge fan of peppermint so I either use raspberry extract or orange extract instead. The cool thing about this cake is that it makes the frosting at the same time you're making the batter. You can find the recipe by following the link above. Oh, and when the recipe says mix on low speed, follow the directions. 

When baked, cooled, and frosted, serve the cake with tea or coffee in whatever clean cup you have available.

  2. This looks delicious. Is the cake moist? I love chocolate, but I usually don't like chocolate cake because it is dry.

    1. Hmmm, it's a bit dense. I'm not sure I would call it dry, but it's not really light and fluffy like a cake mix.

  6. I read the directions because I couldn't figure out how you create the cake and frosting at the same time. It looks beautiful. I'm definitely impressed and I bet the young one appreciated all the work you put into it.

    Thanks for sharing the recipe (I would NEVER use anything but real butter). It was definitely a sign of the times with the Crisco. I remember my Grandmother had an entire large pamphlet of recipes put out by that company.

    Then I laughed until I sneezed at the statement "in whatever clean cup you have available." Loved it. Thanks for sharing the recipe and your clean cup of tea with us for T this Tuesday, dear CJ.

    BTW, you went over and above on that box of goodies. It was Christmas and my birthday all rolled into one!!!

    1. It's a nice recipe and if you don't like peppermint, orange, or raspberry flavoring, you can just add a little extra vanilla.

  8. i liked reading about this .... interesting about the frosting. I love peppermint... anything...

    your post reminded me that when my mom died she had a good size plastic tub with all her receipes in it. I saved off a few and put them aside and placed the tub somewhere and in the move after we sold some how it got thrown out. Nice that you have your mom's recipes.

  9. I just printed that very clever recipe. We don't like peppermint either. And "exotic" aren't available here. All I have on hand besides vanilla are lemon, almond and spiced rum (from a vacation in Puerto Rica). What do you think? I'm leaning toward the spiced rum.

  12. When you give out the slices of that cake, include me in! Sounds delicious. Using an early portion of the cake batter, before eggs, is an ingenious way to make the frosting.

    1. Nasty enough to knock lots of trees down around town. Power went out around 6p though the powerwall took over so we have electricity to run the well to flush the toilet. 💃🕺

  17. Oh yumm! That looks really delicious. So I went directly to the recipe, thing I could make it, but alas, six cups of confectioners sugar is just not going to happen. They sell it here in little pots. To fill 6 cups, I would need about 24 little pots! (And it's not cheap). I have tried to make my own in my food processor, but I can't get it as fine as what you buy in the shops. Too bad...

    1. Oh, that's too bad. The confectioner's sugar is needed because that and the cream cheese make part of the frosting.
