Part of storm prep includes baking some goodies. While I had baked brownies from a mix for the blizzard, I also wanted something different. I was searching through my recipes when I found a recipe I had forgotten about. Yogurt Cake, a simple pound cake like tea bread. Even better, the recipe site also included a variation, Earl Grey Yogurt Cake Perfect!
The two cakes use the same recipe except the Early Grey cake uses two tablespoons of Earl Grey tea for flavoring along with vanilla extract and is baked in a round pan. I used two teabags of Twinings Earl Grey Tea and baked the cake in a loaf pan following the timing for the Yogurt Cake.
The yogurt adds moisture and texture to the cake. The Earl Grey tea leaves add the distinctive flavor of bergamot from the tea blend, and the tea leaves look pretty speckled throughout the cake. I thought this cake would also be good with the addition of orange and lemon extracts to make it into a Lady Grey cake.
The cakes can be dressed up with fruits like strawberries or dusted with powdered sugar or enjoyed plain.

Deletedeal ...I would rather clean toilets and do yard work that be in the kitchen. I was never like this when my kids were little but now - i have no desire to bake or cook. Once in awhile I make a pasta which we use to get at Spaghetti Factory - Mizithra shredded cheese with brown butter. Cook the pasta, put browned butter over it and then mizithra. That's my go to when i decide to cook. I forgot - egg salad - almost once a week and my signature turkey sandwhiches that all my boys loved when they were kids. My son, just the other day came up and wanted one but I didn't have what i needed to make him a few sandwhiches. Next time he will alert me he is coming up.

ReplyDeleteNot sure about the oil, will show the recipe to Ingo (he cannot have hot oil, but maybe baked is different).
If Ingo can't have any kind of oil, try substituting unsweetened applesauce for the oil. I can't guarantee it will work.
