Autumn Carrot and Sweet Potato Soup

Several readers have asked for the recipe for the sweet potato and carrot soup I made last week. I found a recipe online: Autumn Carrot and Sweet Potato Soup 

The recipe was easy to follow with ingredients you probably already have. It did suggest using an immersion blender which I don't have. I used a regular blender and blended the soup in batches.

  1. I have an immersion blender, but I use it to make my handmade soaps. Thanks so much for the recipe. I have to admit, the basil in that photo looks far healthier than what I brought inside last night after mine had been through a night of frost and freezing temps.

    If I make it, I probably won't use any apples and my butter will be salted, since I save my unsalted butter for baking cookies.

  3. I used to have a small immersion blender attachment that came with my hand mixer, but it doesn't work any more. I do miss it for soups.

  5. i'm not a fan of carrot anything unless it's in bread, cake, cookies, ice cream but it sure looks good in that bowl.

    1. It didn't taste so carroty because of the sweet potato and apple. I didn't have a fresh apple so used applesauce instead.

    2. apple/applesauce hmmm.. that would probably mellow it out. I have never been able to eat a raw or cooked carrot..(gag)
